My friends, Sarah & Dave, make a delicious and simple Chicken Shawarma for a quick weeknight meal. It's very easy to scale up or down so you could make it for a small family or when guests come over.
The recipes:
Chicken Shawarma
Ingredients:
1 lb. boneless chicken (thighs or breast)
3 garlic cloves
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1 tablespoon lemon juice
3 tablespoons extra virgin olive oil
salt and pepper to taste
Directions:
Dice chicken to 1/2 inch pieces.
Mix remaining ingredients together in a bowl or Ziploc.
Toss in chicken and mix so that chicken is well coasted in the spice mixture.
Cover and let stand in the fridge for at least 1/2 hour (the longer the better).
Cook the chicken over medium-high heat in a non-stick skillet until done (6-8 minutes).
Tomato, Onion, and Cucumber (TOC) Salad Ingredients:
1 large diced tomato (1/2 inch pieces)
1 diced cucumber (1/2 inch pieces)
1/2 cup diced onion (1/2 inch pieces)
1 tablespoon lemon juice
2 tablespoons extra virgin olive oil
salt and pepper to taste
Accompaniments: hummus, pita bread, or lawash (optional). I use Stone Fire mini naan. Yum!
Mix together all ingredients, seasoning with salt and pepper to taste.
Serve immediately or chill in refrigerator.
To make a sandwich: Spread a thin layer of hummus on a piece of pita bread/lawash (optional). We use StonefireAdd the chicken and a few spoonfuls of the Tomato, Onion, and Cucumber Salad. Roll up and enjoy!*
To make a salad: Spread a layer of the Tomato, Onion, and Cucumber on a plate. Top with chicken, and a dollop of hummus.
